Health{ier} Baked Potato Recipe

I found a delicious looking baked potato recipe that I wanted to try with my Grilled Ginger-Lime Tuna Steaks. Here it is:

Ingredients:
Whole Potatoes (1 per person)
Olive oil
Melted butter (I used 2 tablespoons equal to one tablespoon per potato)
Sea salt and ground pepper

First preheat the oven to 425. Then take a knife and slice each potato almost to the bottom but so it is still attached. Then drizzle olive oil and melted butter over each potato and sprinkle with sea salt and pepper. Then wrap each potato individually in tin foil and bake for 40 minutes. The final result is quite tasty and a much healthier alternative to the normal butter, sour cream, chives and bacon bits loaded baked potato.
