Eight Days of Easter: Day 8

For the final day of my Eight Days of Easter: Peeps Edition, I decided to make Easter themed cupcakes with Peeps on them. I'm sure there are a lot of different ways I could have done them but I liked the idea of dying coconut green to make it look like Easter grass for the Peeps to sit on. I made a batch of Yellow cupcakes and iced them with chocolate icing. I ran out of chocolate icing on the last few so I had to switch to vanilla. I then put the dyed coconut on top of each cupcake and topped them with a Peep. I put a dab of icing on the bottom of each Peep to help it stay put.
